Shiitake Mushroom Stir Fry
This yummy shiitake stir fry is extremely quick and easy to make. It's packed full of wonderful flavours, spices and textures and is a really healthy dinner or lunch option to kick start the week!

Ingredients - Serves 2
1 vegetable stock cube
2 nests medium egg noodles
1 small head broccoli (broken into florets)
200g pack shiitake or Mixed woodland mushrooms thickly sliced
2 fat garlic clove, finely chopped
½ fresh red chilli (finely sliced)
½ fresh green chilli (finely sliced)
1 red onion (chopped)
4 spring onion (thinly sliced)
Handful of cherry tomatoes (halved)
2 tbsp oyster sauce
Handful cashew nuts
Rapeseed oil (or fry light for a healthier option)

Method for shiitake mushroom stir fry
Cook the noodles in a pan of boiling with the stock cube for 2 minutes. Add the broccoli and boil for a further 1 minute. Keep a cup of the stock, and drain the noodles and vegetables.
Heat a frying pan or wok, add the rapeseed oil and stir-fry the onions and garlic for 2 minutes, then add the mushrooms for a further 2 minutes until golden, season to taste. Add the fresh chilli and most of the spring onions, and for cook 1 minute more.
Next tip in the noodles and broccoli, plus 3 tbsp of the stock and the oyster sauce, then fold together until mixed throughout.
Serve the noodles with the cashew nuts, cherry tomatoes and sprinkling the remaining spring onions.
