Char Khumbi Woodland Mushroom Curry
This Char Khumbi woodland mushroom curry is extremely healthy and super delicious and will certainly get your tastebuds racing. Serve with a dash of yogurt and mango chutney for the best results. Its a quick and easy lunch or super dish perfect to feed the family or friends.
Ingredients - Serves 4
3 x 200g mixed woodland mushroom packs
1 x 200g Shiitake
1 Onion
2 cloves garlic
1tbsp Oil (or fry light for a healthier option)
70g Mild Curry Paste
100g Fat-Free Natural Yogurt
Handful spinach
Rice
Mango chutney (optional)
Method
Slice the onions and fry in the oil until soft, then add the garlic with the curry paste and cook for a further 3 minutes.
Roughly chop the mushrooms and add to the pan along with the seasoning and 4 tablespoons of water, cook for 4 minutes.
Take off the heat and stir in the yogurt and spinach (add more yogurt if required), then heat for a further 1 minute.
Serve the curry with rice and mango chutney if desired.
