Woodland Mushrooms Fritters
These fritters are so quick to make and are so tasty to! Get a tasty dipping sauce like a tzatziki or humus and enjoy. These are great to share with friends and they will certainly be impressed! This recipe makes 30 delicious fritters and will only take you 15 minutes!
Ingredients for Woodland Mushroom Fritters
Eryngii - 100g & Shiitake - 100g (or 200g mixed woodland mushrooms)
Self raising flour - 150g
Chives - 1 Bunch
Milk - 240ml
Eggs - 2
Parsley - 10g
Olive oil - 5 Tbsp
To serve
Tzatziki
Instructions to make Woodland Mushrooms Fritters
Heat 1tbsp of olive oil in a pan and fry the mushrooms for 2 minutes until soft.
Combine the self raising flour and salt & pepper in a bowl.
Whisk the eggs and milk together in a separate bowl before adding to the flour, salt and pepper.
Whisk the mixture until it becomes smooth.
Add the mushrooms, chives and parsley to the mixture and mix together.
Add 4tbsp of oil to a non stick frying pan to cover the base and when hot, drop a spoonful of mixture into the pan and fry for 3 minutes either side until golden brown.
Serve the fritters with a tzatziki dip.
