Woodland Mushroom Thai Yellow Curry

Ingredients - Serves 4
2 x 200g of mixed woodland mushrooms (buy here)
Sesame seed Oil
1 Large aubergine
400ml Coconut milk
2 Heaped tablespoons Thai Yellow curry paste
2 Shallots, chopped
1 Large bunch of coriander, chopped
Cashew nuts, to serve
Rice, to serve
1 Lime, squeezed
Method
Prepare the Woodland Mushrooms. Heat the sesame oil in a frying pan and cook the mushrooms until golden. Meanwhile chop the shallot and add to the pan along with the mushroom, leave to cook for two minutes.
Add the curry paste to the pan along with the mushrooms and shallot, stir well and then add the coconut milk. Mix well until all combined. Simmer for 10 minutes.
Meanwhile chop the aubergine and add to the pan for a reaming 10 minutes stir until the aubergine has become soft.
Add a squeeze of lime juice to taste, serve into bowl with rice and enjoy!
